Corned Beef Reuben Sandwiches Yum!

I’m a huge fan of Reuben sandwiches.  It all started about 5 years ago where I had a very good one at a restaurant near my work and I started to looking for other good Reuben sandwiches.

Thanks to Redemption Unlimited ladies for mentioning that corned beef is $1.49 lb at Giant this week.   I got a 5 lb brisket for under $8.  That right there is the cost of 1 sandwich at a nice restaurant here in the NOVA area.   I made this recipe for the brisket and then I made this recipe for cabbage, potatos and carrots.   Wow!  This is amazing.  My husband wants another sandwich right now.  I better go make it.

I updated my version a little bit.

Crockpot version

Ingredients

  • 1 5 lb corned beef brisket with spice packet  (I had to cut it up in order to fit in the crockpot)
  • 2 (12 fluid ounce) bottles beer
  • 2 bay leaves
  • 1/4 cup peppercorns
  • 1 bulb garlic cloves, separated and peeled OR 3 teaspoons of jarred minced garlic

Directions

  1. Place the corned beef briskets into a large pot. Sprinkle in the spice packet.  Pour in the beer, and fill the pot with enough water to cover the briskets by 1 inch. Add the bay leaves, peppercorns and garlic cloves. Cover, put on low for 8-10 hours.
  2. Carefully remove the meat from the pot, as it will be extremely tender. Set on a cutting board, and allow it to rest until it firms up a bit, about 10 minutes. Slice or shred to serve.

I’m thinking of taking the cooking liquid, and making french onion soup.

Giant Shopping Trip 03/06/10 – saved 50%

Here is the scoop.  I spent $34.96 at Giant today and saved $36.12.   Plus, I got a $5 and $3 catalina to use on my next trip.    I saved 50%!

I used coupons from the Small Victories magazine available at Giant. Ask customer service for this booklet.

There are 4 – $1 double coupons in the Giant circular. Check your Giant circular because it is only available in those ads sent home.

I did 2 catalina deals on this trip.

1 – Dried Goya Lima Beans on clearance $.84 (Not a huge lima bean fan but they are very healthy and I’m hoping I can find a good recipe besides my daughter loves to play with the bags of beans in the kitchen.)

1 – Taco Seasoning in container on clearance $1.60

Does anyone know of places that sell bulk food?

I was just reading MoneySavingMom.com’s post about her shopping trip this week and purchasing Bulk food from a local store that just sells bulk food at great prices.  I’m super excited about this because in some cases it is a lot cheaper and healthier.

Do you know of a store in the Washington metro area (Northern Virginia, DC, or Maryland) that sells bulk food?

I did a little research and found a place in Harrisonburg, Virginia http://grandmaspantryva.com that is a couple hours away.   The prices are really good.  A great stockpiling place!  I’m curious of the cost of shipping.

Harris Teeter Shopping Trip – 02/23/2010

I needed milk and I really wanted to go to Harris Teeter for the last day of super double coupon event.  Thanks to my wonderful couponizer I did have several coupons that I could use to make the trip well worth my while.

Here is a neat hint in the front of the store most Harris Teeter stores will have a clearance setup.  This store had a lot of medicine but a lot of it was expired!!! Oops!! Not even sure if they are allowed to sell expired medicines.  Anyway, always check you never know what deals you might find.

Safeway Shopping Trip 2/15/10

Wow!  Thanks to MoneyWiseMoms.com for this awesome trip to Safeway yesterday.  She mentioned that there was a $15 off a $100 coupon in the Sunday 2/14/10 Washington Post which expires on 2/22/10!  Run to your recycling bins to pick it up.

I know spending at least $100 is way above my budget each week but last week I didn’t go to the store so I was hoping I could get it to less than $80.

Note:  I was rushing to get everything put away so my daughter helped me put everything on her table.  She is a great helper!

Drum roll please….

Club card savings $92.45 (includes Safeway coupons and the $15 off $100 purchase + ecoupons)

Coupon savings $12.70  (only manuf. coupons + doubling )

My goal was to get some of the deals she mentioned in her post but unfortunately the store was out of a lot of items including the Cookie Mixes and Raisin Bran cereal.  Today is the last day of this sale.

Here are some other things to keep in mind.   Gina mentioned the $2 off a $10 Ranchers meat coupon, note you can print this coupon off or have it on your Safeway club card like an e-coupon. I had it as an e-coupon.  Unfortunately my dear hubby bought 2 of the best cuts he could find and they were $9.49, and I didn’t notice, duh!  If I had reached $10 it would have been about $8.  Even though I missed that coupon it still wasn’t bad at all!   I now have 2 large chuck roasts for dinner!  Now, what to make?

You can print a coupon for $2 off any $10 Ranchers Reserve Beef purchase at Safeway.com. This week, Boneless Beef Chuck Roast, Shoulder Roast, and Round Tip Roast is all $1.99/lb.

I bought some Jenni o Ground Turkey at $4.99 B1G1 = $2.49 each.  Not bad for high quality ground turkey.  Perfect for yummy turkey burgers this week.  Freeze one for next week!

The Yoplait Fiber one yogurt came out to be a moneymaker because I had a manf. coupon ($1.00/1) and 2 e-coupons ($1.00 each).  I just bought 1 and I got $3.00 off my bill!

YoPlus Yogurt is on sale for $2.00. There was a $1.00 off coupon in the 2/7 insert or you can print this one.

One bummer is I didn’t get the Catalina coupon for the Kleenex.  The machine looked to be broken – note:  red and green lights were blinking!  I don’t think it is worth it to call the Catalina company for a $1.00 coupon, do you?  On the upside/downside on my receipt which is hard to understand, looks like the cashier may have scanned the Safeway coupon twice because I have 2 lines that say:    CPN Kleenex Facial $2.00-   Oops!  4@$1.50 Kleenex $6 – $2 – $2 – $1/4 manufacture coupon= $1 for 4 boxes!  That oops makes it $1 for 4 boxes.  Ok, never mind, I won’t call the Catalina company.

Kleenex Tissue is $1.00/box when you buy 4 using the in-ad SuperCoupon. Use the $1.00/4 coupon from the 1/3 insert, and you’ll also get a $1.00 Catalina coupon for buying 4. That makes them .50/box.

If are looking for a filler at Safeway I strongly suggest getting some Safeway unbleached flour i.e. healthy then regular flour and it is only $1.59 for 5 lbs!

If you like to bake and to have some supplies on hand Knox 5 single packs of plain gelatin are $1.69

I also stocked up on tuna and I didn’t see any signs in the aisle about the limit 6 so I bought 10 and used 2 – $.75 coupons.   I’m good on tuna for a while!
